Seattle – Chao Ya’ll Pop-up

Vietnamese-Southern Mash-Up:Chào Ya’ll is a Vietnamese pop-up dinner with a Southern twang. In this eight-course tasting menu, chefs Joe Holberg and Matt Bumpas cook up rare delicacies like coconut and molasses braised beef cheeks, pea vines with country ham, and a banana pudding ice cream sandwich.
Trailblazing Flavors: Bumpas is an auteur in the kitchen, especially when it comes to desserts. At Poppy, he was known for going all-out to capture the wild flavors of his imagination, going as far as fermenting his own black rice to use in ice cream.
Globetrotting Chef:Golberg has cooked everywhere from the South of France to the Mediterranean and Caribbean seas, where he worked as a private yacht chef. He’s in the process of creating his own catering company in Seattle.


The oyster was super fresh, thankfully Seattle isn’t susceptible to the no “r” months have bad oysters. Great balance of flavors except not much Tabasco.


Favorites were the fish cake biscuit and vines & ham


Very pretty dessert. Banana pudding was very banana and the caramel sauce was divine
