Seattle – Eden Hill

After trying a la carte items from Eden Hill a few months ago, I had to go back to try their tasting menu and see what the kitchen would send out. None of the dishes are from the regular menu and after taking down our dietary preferences the small team in the equally small kitchen got to work. Overall the meal was excellent and a big diversity in flavors, I’ve never had goose tongue until now and would say it is similar to green onion.


Hollow melon filled with blue cheese  over cucumber, mint leaf


Asparagus and jalapeno soup, poached egg, squid ink bread crumbs


Cod, turnip goose tongue


Pork belly, pickled cabbage, red miso


Squab two ways roast breast and deep fried thigh, corn, peanut oil snow


Foie gras, pecan, Saskatoon berry, pea snap


Angel food cake meringue, calamansi curd
